Greek spinach rice

INGREDIENTS

  • 50 gr extra virgin olive oil
  • 80 gr spring onions, cut in three
  • 100 gr leeks, cut in pieces
  • 500 gr fresh spinach leaves
  • 170 gr long grain rice
  • 500 gr water
  • 1 tbsp vegetable stock paste
  • 1 tsp salt
  • 30 gr lemon juice
  • 3 tbsp chopped dill

PREPARATION

  1. Place extra virgin olive oil, spring onions and leeks in mixing bowl and chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula.
  2. Sauté without measuring cup 3 min/120ºC/speed 1.
  3. Add spinach leave sand sauté without measuring cup 5 min/120ºC/reverse/speed 1.
  4. Add rice and sauté without measuring cup 2 min/120ºC/reverse/speed soft. Scrape down sides of mixing bowl with spatula.
  5. Add water, vegetable stock paste and salt and cook 12 min/100ºC/reverse/speed soft.
  6. Add lemon juice and dill and cook 2 min/100ºC/reverse/speed soft. Transfer into a serving bowl and serve hot.
