Salad of wild greens with lemon vinaigrette

- 500 g. water
- 500 g. sweet wild greens
- 20 g. olive oil
- 1/2 lemon, preferably organic, zest
- 3 medium beetroots, cut into 4 pieces
- 60 g olive oil
- 20 g lemon juice
- 10 g white balsamic vinegar
- 10 g mustard
- 1/2 tsp salt
- Wash the greens well under running tap water. Place the greens in the deep Varoma tray and place water into mixing bowl. Place beetroots in the basket and put basket into the mixing bowl. Place Varoma into position and steam 30 minutes / Varoma / Speed 1.
- Place steamed greens into a serving bowl and hold them aside.
- Place olive oil, lemon juice, balsamic, mustard and salt into the mixing bowl and mix 10 seconds/speed 4.
- Season the greens with vinaigrette, 20 gr. olive oil and lemon zest and serve your salad at room temperature.
