Milk chocolate mousse

- 40 g sugar
- 250 g milk chocolate cut into pieces
- 150 g cream, min 35% fat
- 4 eggs separated
- 1 pinch salt
- Put sugar into mixing bowl and grind 10 seconds / speed 10. Scrape down sides of mixing bowl with spatula and transfer the sugar to an other bowl.
- Put the chocolate in the mixing bowl and grind for 15 seconds / speed 8. Scrape down sides of mixing bowl with spatula.
- Add sugar and cream and melt 4 minutes / 50 ° C / speed 2.
- Separate the egg yolks from the egg whites. Add the egg yolks to the mixing bowl and mix 15 seconds / speed 4. Transfer the mixture to a medium-sized bowl.
- Wash and dry the mixing bowl very well and place the butterfly whisk. Put the egg white and salt into mixing bowl and whisk 4 minutes / speed 3.5 or until stiff. Add the meringue to the chocolate mixture and mix gently with the spatula.
- Put the mousse for at least 3 hours in the refrigerator before serving.
