  • 40 g sugar
  • 250 g milk chocolate cut into pieces
  • 150 g cream, min 35% fat
  • 4 eggs separated
  • 1 pinch salt


  1. Put sugar into mixing bowl and grind 10 seconds / speed 10. Scrape down sides of mixing bowl with spatula and transfer the sugar to an other bowl.
  2. Put the chocolate in the mixing bowl and grind for 15 seconds / speed 8. Scrape down sides of mixing bowl with spatula.
  3. Add sugar and cream and melt 4 minutes / 50 ° C / speed 2.
  4. Separate the egg yolks from the egg whites. Add the egg yolks to the mixing bowl and mix 15 seconds / speed 4. Transfer the mixture to a medium-sized bowl.
  5. Wash and dry the mixing bowl very well and place the butterfly whisk. Put the egg white and salt into mixing bowl and whisk 4 minutes / speed 3.5 or until stiff. Add the meringue to the chocolate mixture and mix gently with the spatula.
  6. Put the mousse for at least 3 hours in the refrigerator before serving.
