Melomakarona in 30 min!

  • 80 g butter
  • 200 g sunflower oil
  • 80-100 g sugar
  • juice and zest from 1 orange
  • 50 g cognac
  • 1/2 teaspoon of cinnamon
  • 1/4 teaspoon carnation
  • 500 g flour
  • 2 teaspoons of baking powder
  • 1 teaspoon of baking soda

For the syrup

  • 400 g sugar
  • 400 g water
  • 400 g thyme honey
  • 1/2 orange zest
  • zest of 1/2 lemon (lemon)
  • 1 cinnamon stick

For the garnish
70-100 g walnuts or pistachios




  1. Preheat oven to 180ºC and cover two baking trays with baking paper and set aside.
  2. Put the butter, sunflower oil, sugar, juice, cognac, cinnamon, carnations, orange zest, lemon zest and grind 1 minute / speed 6.
  3. Add the flour, baking powder, soda, mix for 10 seconds / speed 5 and knead 2 minutes / knead speed. If the dough is still too tight add some juice or water. Place the dough in a container and let it for at least half an hour to rise.
  4. Pinch a portion of dough about the size of a walnut/ 50g (or bigger, if you prefer) and shape with your palms into a smooth oblong shape, like a small egg. Place on the baking tray, push lightly the top with a fork and make some holes on top (not all the way down). Continue with the rest of the dough.
  5. Bake in the oven for about 18-20 minutes. Allow the melomacarona to cool well and prepare the syrup.


  1. Put all the ingredients in the mixing bowl and boil at 110 ºC / 5 minutes / speed 1.
  2. Put the syrup in a bowl let it warm. Place them in the syrup, flipping them with a slotted spoon to absorb the syrup for approx. 20-30 seconds, depending on how syrupy you like them.
