Yogurt cheesecake with strawberry sauce

INGREDIENTS

  • 100 gr. digestive biscuits
  • 25 gr. butter, in small pieces (0,5 cm)
  • 300 gr. Greek yogurt, 10 % fat
  • 200 gr. cream cheese, in pieces
  • 1 tbsp honey
  • 25 gr. vanilla sugar, homemade
  • 200 gr. fresh strawberries

PREPARATION

  1. Place biscuits in mixing bowl and crash 5 sec/speed 10. Scrape down sides of mixing bowl using spatula.
  2. Place butter and mix 10 sec/speed 5.  Divide crumb mixture between 6 glass jars (Ø 6 cm, height 8 cm).
  3. Place yogurt, cream cheese, honey and 5 gr. vanilla sugar in mixing bowl and mix 10 sec/speed 5. Pour cheesecake filling over crumb base in glass jars.
  4. Place strawberries and 20 gr. vanilla sugar in mixing bowl and heat 4 min/80°C/speed 3. Transfer strawberry sauce into a small bowl and leave to cool (20 min).
  5. Pour strawberry sauce over each cheesecake and refrigerate for at least 30 minutes. Serve chilled.

 

TIP

  • Instead of homemade vanilla sugar, you can use 25 gr. icing sugar and 1 tsp vanilla extract.
